Within the past few years, my friend Julia has become more and more gluten intolerant. Sometimes, her temptation to eat glutenous snacks gets the better of her and she has to dig in. Like many others looking to live a gluten free life, Julia looks for alternative ingredients and substitutions for her favorite snacks. When she told me how much she liked Bob’s Red Mill 1 to 1 Gluten Free Baking Flour, I decided to test it to see how it stands up in my favorite chocolate chip cookie recipe.
You will need..
1/2 cup granulated sugar
1/2 cup light brown sugar
2 sticks unsalted butter, diced, room temperature
1 teaspoon vanilla
2 eggs, at room temperature
1 cup mini cinnamon chips
3 oz dark chocolate, chopped
2 cups Bob’s Red Mill 1 to 1 Gluten Free Baking flour
1/2 tsp baking soda
1/2 tsp salt
Turbinado sugar for sprinkling
Preheat your oven to 350 degrees. Line two baking sheets with parchment or Silpats.
Whisk together the flour, baking soda, and salt and set aside.
In the bowl of a stand mixer, or a bowl with a hand mixer, add the granulated sugar, brown sugar, and room temperature butter. Beat the ingredients together for 2-3 minutes until very light in color and fluffy. Scrape the sides of the bowl with a rubber spatula and add the eggs, one at a time to incorporate, scraping the bowl between additions. Add the vanilla extract and incorporate.
Add your flour mixture in two parts. Mix well and scrape the bowl between additions. With your spatula, mix in the cinnamon chips and chocolate by hand.
Scoop equal sized balls onto your baking sheet, about 2 inches apart. You can use an ice cream scoop or a spoon to portion the dough.
Bake for 15-18 minutes until golden brown. Halfway through the bake, sprinkle the cookies with turbinado sugar (Sugar in the Raw) and rotate the pans and bake for the remaining time.
These cookies are delicious when they’re crispy and also great under baked. For an extra sweet treat, place a scoop of your favorite flavor ice cream between two warm cookies and enjoy a home made ice cream sandwich!
These cookies are guaranteed to please gluten eaters and gluten avoiders alike. The nutty flavor of the flour compliments the cinnamon and chocolate in the cookie making a great dessert for company or to enjoy by yourself!
